  • 4 x Fresh Figs

  • Soft Goats Cheese (Best is with rind on)

  • Strawberries

  • Raspberries

  • Blueberries

  • Vanilla Ice Cream

  • Chopping Board / Presentation Slate

  • Sharp Kitchen Knife

  • Oven Proof Tray or Dish

  • No Cheats 

  • 2 x Ginger Biscuits

       Fresh Mint (Optional)

WHY THESE CHEATS ?

"There are no cheats to this dish apart from the shop bought thick Balsamic Drizzle. Most larger supermarkets carry this a part of their vinegar range."  - MR HANS

METHOD:

Fresh Figs are sometimes hard to come by, so when you do spot them in the shop, I urge you to try out this dish. The recipe is more about construction and presentation rather than cooking. The best Goats Cheese to use is 'Soft with Rind On' as it keeps its shape when baking. The dish forms a great end to any meal, combining a dessert with a cheese course. Adding some Balsamic Drizzle to the dish gives it an extra depth of flavour and goes very well with the summer fruits.

HOW TO PREPARE

  • Preheat the Oven to 200c or 180c Fan

  • With a sharp knife, cut a deep cross through the top (stalk end) of each Fig, around ¾ of the way down

  • Squeeze each Fig at the base creating a 4 x petal flower shape (see image above)

  • Place the Figs onto an Oven Proof Tray

  • Cut the Goats Cheese into 1cm slices and add to the top of each cut Fig

  • Bake in the Oven for 10 to 12 minutes until the Goats Cheese has started to melt and slightly brown

  • Arrange your selection of Summer Fruits & Berries on a large plate or Presentation Slate (similar to the image above)

  • Crumble the Ginger Biscuits and lay in a decorative line on the plate/slate

  • Add a scoop or quenelle of Vanilla Ice Cream topped with a sprig of Mint

  • Add Balsamic Drizzle (Optional) 

  • The dish is now ready to serve

TEMPERATURES

Conventional Oven - 200c or 180c Fan

Serve as a combined Dessert & Cheese Course
